It’s been a cold week here in Cleveland Heights so there were a couple good reasons to do some baking – I was able to try this recipe and having the oven on kept the kitchen warm. I’ve tried making granola in the past without much success – the bars ended up being dry and flavorless and they fell apart when cutting them. Not so here – these were a great chewy consistency and the combination of dried fruits with the oats, sunflower and pumpkin seeds was really delicious. I used dried cherries, dried cranberries and raisins and then threw in a few mini chocolate chips I had in the cupboard for good measure. I’d never heard of brown rice syrup and thought I’d be looking all over the city trying to locate some but was pleasantly surprised to find it in my local supermarket. I liked the way it held everything together and I think it also gave the bars more flavor than using corn syrup.

I’ll definitely make these again – they were remarkably easy to do and they taste great. Also, the temperature’s supposed to be going down into the single digits the next couple of nights so it might be sooner than later.
Easy and tasty describes them perfectly. I, too, was surprised at how easy it was to find the brown rice syrup, an ingredient first for me as well.

I think the magic step is pressing them down when they come out of the oven. Amazing the things one learns from a new recipe, isn’t it?

Yep, here in the Midwest in January, it’s a good thing to have the oven going for a little additional heat! 🙂 Your bars look great and yes, I believe we will be making these again soon, a chance to use the new syrup.

Cold on the East Coast as well! The granola bars turned out really well, which was a nice surprise. I thought they were going to be blah, but they were delicious.

I was delighted with how easy and quick this recipe turned out to be. And the clean up was a snap with the parchment paper. A win win in my book.

Your bars look great! They were a big hit in my house! I didn’t find the brown rice syrup, so I used honey and brown sugar…really delicious! It’s quite cold here in NJ as well! Stay warm!

Love the snowy picture! Easy for me to say, we have been having seventy degree weather. Your bars look wonderful; they would make a perfect lunch snack, and I’m sure your nieces and nephews will love them. Maybe a bake sale in your future?

Yum! These look great. So crazy to think about it so cold elsewhere. It’s in the mid 70’s here in Phoenix and I consider it sweater weather.
